Ingredients
- 2 green mangoes, julienned
- 2 large carrots, julienned
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2 red cabbage, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, chopped
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 tsp fresh ginger, grated
- 2-3 tbsp water (to thin dressing)
Method
- In a large bowl, combine julienned mango, carrots, bell peppers, and red cabbage.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger.
- Add water gradually until the dressing reaches your desired consistency (creamy but pourable).
- Pour the peanut dressing over the vegetables and toss to combine.
- Add fresh cilantro and mint, and toss again.
- Top with chopped roasted peanuts.
