Ingredients

  • 2 green mangoes, julienned
  • 2 large carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 red cabbage, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup roasted peanuts, chopped
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 2-3 tbsp water (to thin dressing)

Method

  1. In a large bowl, combine julienned mango, carrots, bell peppers, and red cabbage.
  2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger.
  3. Add water gradually until the dressing reaches your desired consistency (creamy but pourable).
