Blackened Cajun Steak Caesar Salad

Ingredients
- 1 lb ribeye steak
- 2 tbsp Cajun seasoning
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 heads romaine lettuce, chopped
- 1 cup croutons
- 1/2 cup parmesan cheese, shaved
- 1/4 cup Caesar dressing
- 2 anchovy fillets, minced
- 1 clove garlic, minced
- 2 tbsp lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Method
- Combine Cajun seasoning, paprika, cayenne, garlic powder, and onion powder in a small bowl.
- Rub the spice mixture generously over both sides of the steak.
- Heat a cast-iron skillet over high heat until smoking hot.
- Cook the steak for 4-6 minutes per side for medium-rare, creating a blackened crust.
- Remove steak and let rest for 5 minutes, then slice thinly.
- In a large bowl, whisk together Caesar dressing, anchovies, garlic, lemon juice, and olive oil.
- Add romaine lettuce to the bowl and toss with the dressing.
- Divide salad among plates, top with sliced steak, croutons, and parmesan.
- Serve immediately.
