Strawberry Balsamic Summer Salad
A refreshing summer salad featuring fresh strawberries, creamy goat cheese, candied pecans, and a sweet homemade balsamic glaze. Perfect for warm weather dining.
Ingredients
- 6 cups mixed greens
- 2 cups fresh strawberries, sliced
- 4 oz goat cheese, crumbled
- 1/2 cup candied pecans
- 1/4 cup red onion, thinly sliced
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 1/4 cup olive oil
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Method
- In a small saucepan, combine balsamic vinegar and honey. Bring to a boil, then reduce heat and simmer for 5-7 minutes until reduced by half and syrupy. Set aside to cool.
- In a small bowl, whisk together olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
- In a large salad bowl, combine mixed greens, sliced strawberries, red onion, and candied pecans.
- Drizzle with the vinaigrette and toss gently.
- Top with crumbled goat cheese.
- Drizzle the balsamic glaze over the salad just before serving.
- Serve immediately and enjoy!
