Strawberry Balsamic Summer Salad

A refreshing summer salad featuring fresh strawberries, creamy goat cheese, candied pecans, and a sweet homemade balsamic glaze. Perfect for warm weather dining.

Ingredients

  • 6 cups mixed greens
  • 2 cups fresh strawberries, sliced
  • 4 oz goat cheese, crumbled
  • 1/2 cup candied pecans
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1/4 cup olive oil
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Method

  1. In a small saucepan, combine balsamic vinegar and honey. Bring to a boil, then reduce heat and simmer for 5-7 minutes until reduced by half and syrupy. Set aside to cool.
  2. In a small bowl, whisk together olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
  3. In a large salad bowl, combine mixed greens, sliced strawberries, red onion, and candied pecans.
  4. Drizzle with the vinaigrette and toss gently.
  5. Top with crumbled goat cheese.
  6. Drizzle the balsamic glaze over the salad just before serving.
  7. Serve immediately and enjoy!
