Ingredients

  • 1 lb flank steak
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 3 tbsp olive oil
  • 1 tsp honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method

  1. Preheat grill to medium-high heat. Season flank steak with olive oil, salt, and pepper.
  2. Grill steak for 4-5 minutes per side for medium-rare, or until desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
  3. In a small bowl, whisk together lime juice, olive oil, honey, garlic, salt, and pepper to make the dressing.
  4. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and cilantro.
  5. Add the sliced steak and avocado to the salad.
